2 eggplants cut into rings
1 finely chopped onion
2 cups tomato paste
1 tablespoon dry oregano
1 tablespoon dry thyme
freshly ground pepper
2 packages Hallumi cheese, cut into slices
10 pitted olives, cut into pieces
3 tablespoons finely chopped parsley
HOW TO MAKE IT
Put salt at the eggplants end let them for 30′.
Wash with cold water and dry with a napkin.
Put baking paper in an oven dish and apply the eggplants.
With a baking brush coat every slice with olive oil,
and grill for 3′-4′ every side.
Sautee in a deep pan the onion with 4 tablespoons olive oil
for 4′, put tamato paste and cook for 4′,add the herbs,salt, pepper.
Into a pirex put the 1/2 of tomato sauce,put over the eggplants slices
and Hallumi for cover every slice.
Pour the other 1/2 of tomato sauce.
Preheat the oven at 200o C for 10′.
