Fluffy cheesepie with herbs

This is another one version of a cheesepie, among others.

It’s a snack, you can have it at work, at school and the most important is that it’s homemade.

They look like these you can buy from a bakery, but they have a significant difference. The dough has only a bit of butter and the cheese is pure greek feta.

Flavored with herbs Feta will give its special flavor. We do not add anything else, except freshly ground pepper, oregano, thyme and mint.

The dough is the same as what we did for the croissants. We knead it, we cover it and let it until we prepare the cheese. We split the dough for this recipe into eight parts and we make eight small dough balls.

We make each ball  a filo, we spread the cheese, we shuffle with herbs and initially we start to roll.

We make each filo as a «snail». We put a baking paper into a baking pan and start to put the pies.

After we finish, we whisk the yolk of an egg and brush them.

Bake at 180 ° C for 25 “.

It’s a treat you can eat for breakfast, in your break from work, in the evening as a snack or to share with friends.

You can serve it as a sandwich, adding cold cuts and cheese.

Even  the combination with honey, it’s not a bad idea for the daring.

We will need the following:


INGREDIENTS FOR THE DOUGH

300 ml fresh milk 2%

50 gr butter (at room temperature)

1 tbsp salt

1 tsp sugar

8 gr dry yeast

600-700 g. flour

FOR THE FILLING

400 g. feta cheese

1 tsp oregano

1 tsp thyme

1 tsp mint

Freshly ground pepper

Herbs are all dry.

Place the feta in a bowl with herbs and smash with a fork while we stir.

HOW TO MAKE IT

We knead until it becomes an even, smooth ball. We cover with a towel and let it until we prepare the filling.

We separate into eight balls the dough. We make each one of them a filo.

We apply the filling and we make every swivel.

BAKING TIME

We put baking paper on the baking pan and place the cheesepies. We brush with the yolk of an egg and bake in preheated oven at 180 ° C for 25′.
